Pilaf is a favorite dish of Uzbek people, a natural table decoration. It is often prepared on ordinary days and on special occasions – holidays, weddings, and even funerals. Pilaf has an important place in the gastronomic tour of the country, and the process of its preparation has been raised to the level of natural skill and art.
Each city, each region of Uzbekistan has its unique method of cooking pilaf. Tashkent wedding pilaf, Teahouse pilaf, pilaf made from Fergana rice “devzira”, Samarkand pilaf, and Khorezm “suzma pilaf” have their own unique, exceptional taste.
Uzbek pilaf is included in the UNESCO list. Any tourist who has arrived in Uzbekistan tries to taste Uzbek pilaf as soon as possible.
Men mainly prepare pilaf in huge cauldrons.
The main ingredients of this dish are carrots, rice, onions, oil, spices, and selected meat.
